Recently, in the historical archives of the City of Cagliari has been retrieved an original document that confirms that the nougat in Sardinia was produced even before 1614. This document written in Catalan is nothing more than an employment contract, notarized between a tradesman from the neighborhood of Villanova in Cagliari and two nougat producers from Sassari, who had to produce white and black nougat at Christmas time… the crunchy sugar.
